FISH SKINNING PROCESS Abstract of the Disclosure The present invention relates to a process for the removal of skin from fish, such as tuna, in which an aqueous dispersion of an at least partially hydrolyzed, modified starch is applied to the skin of a precooked fish. Drying of the dispersion causes the skin to peel, thereby facilitating removal of the skin from the fish.
