The invention provides flaked fish analogs comprising from about from about 18 to about 25% protein, from about 3 to about 9% fat, and from about 60 to about 85% moisture. The compositions have a realistic fish-like appearance and texture, mostly due to the presence of "flakes" that mimic the flakes of real fish.

La présente invention concerne des succédanés de miettes de poisson comprenant entre environ 18 et environ 25 % de protéines, entre environ 3 et environ 9 % de lipides et entre environ 60 et environ 85 % d'humidité. L'aspect et la texture de ces compositions rappellent, de façon très réaliste, ceux du poisson, surtout en raison de la présence de « miettes » qui imitent les miettes de vrai poisson.
