A method of producing a flavonoid aglycone concentrate from plant material containing a suitable flavonoid glycoside and/or conjugate thereof comprising the steps of: (i) enzymatically converting the flavonoid glycoside or conjugate thereof into the flavonoid aglycone; and (ii) adjusting the pH to render the flavonoid aglycone relatively insoluble and forming a concentrate containing the same.
L'invention concerne un procédé de production d'un concentré de flavonoïde aglycone à partir d'une matière végétale contenant un flavonoïde glycoside approprié et/ou un conjugué de ce dernier. Ledit procédé consiste à : (i) convertir de manière enzymatique le flavonoïde glycoside ou le conjugué de ce dernier en flavonoïde aglycone ; et (ii) ajuster le pH, de sorte que le flavonoïde aglycone soit relativement insoluble, et former un concentré contenant ce dernier.
