A red color extract from beets is stabilized against off-flavor by co-drying with a mixture of polyvalent metallic compounds, such as magnesium oxide and calcium chloride. Desirably, the co-dried composition also contains a polycarboxylic acid, or salt thereof, such as citric acid.

Un extrait de couleur rouge provenant de betteraves est stabilisé pour éliminer les odeurs anormales, par séchage avec un mélange de composés métalliques polyvalents, comme l'oxyde de magnésium et le chlorure de calcium. Il est souhaitable que la composition co-séchée renferme aussi un acide carboxylique, comme l'acide citrique, ou un de ses sels.
