Process for the preparation of a flavour extract, in which a mixture containing at least Trigonella foenum-graecum seeds is prepared, this mixture is subjected to enzymatic hydrolysis, it is heat-treated, it is centrifuged, so as to isolate the liquid phase containing the flavours, and then this liquid phase is evaporated, so as to concentrate it. The invention also relates to the flavour extract obtained using the said process and its use for the preparation of food compositions.

Processus de préparation d'un extrait aromatisant, qui consiste à soumettre un mélange contenant au moins des graines de Trigonella foenum-graecum à une hydrolyse enzymatique, à le chauffer, puis à le centrifuger pour isoler la phase liquide contenant les arômes. La phase liquide est ensuite évaporée, afin de concentrer le mélange. L'invention a également trait à l'extrait aromatisant obtenu à l'aide du même processus, ainsi qu'à son utilisation dans la préparation de compositions alimentaires.
