Tripeptides containing a hydrophobic amino acid residue and at least one acidic amino acid residue, as well as amino acid derivatives with an N-lactoyl-X structure, where X is an amino acid residue, are very useful for preparing flavouring compositions and flavoured food products, to which they impart remarkable body and mouthfeel.
