It is intended to provide a method of detecting food allergens, an antibody to be used therein and an antigen for preparing the antibody. The above antigen is a mixture of a plural number of food allergens including undenatured and/or denatured substances recognized by IgE antibody of patients with food allergy. The above antibody is an antibody obtained by immunizing an animal with the above-mentioned antigen. According to the above method of detecting food allergens with the use of the antibody, food allergens and food allergy- inducing foods can be detected, thereby contributing to the insurance of patients against food allergy.

La présente invention concerne un procédé de détection des allergènes alimentaires. L'invention traite également d'un anticorps utilisé avec ce procédé et un antigène pour préparer cet anticorps. L'antigène susmentionné est un mélange de plusieurs allergènes alimentaires comprenant des substances non dénaturées et/ou dénaturées reconnues par un anticorps IgE de patients souffrant d'allergies alimentaires. L'anticorps susmentionné est un anticorps obtenu en immunisant un animal avec l'antigène décrit plus haut. Selon le procédé susmentionné de détection d'allergènes alimentaires à l'aide de l'anticorps, il est possible de détecter des allergènes alimentaires et des aliments provoquant une allergie alimentaire et de protéger ainsi les sujets contre les allergies alimentaires.
