A method and device for sensing food quality includes a detection material having an inherent sensitivity to a contaminant and changing a property in response thereto. The detection material is subjected to a modulating agent to alter the sensitivity of the detection material, so that exposure of the detection material to the contaminant causes the property to change in response to a level corresponding to the altered detection sensitivity.

L'invention porte sur un procédé et un dispositif de détection de la qualité de produits alimentaires utilisant un matériau de détection présentant une sensibilité inhérente à des contaminants et qui en réponse modifient une de ses propriétés. Ledit matériau est soumis à un agent modulateur qui en modifie la sensibilité de manière à ce que son exposition au contaminant entraîne une modification de ses propriétés en réponse à un niveau correspondant à la sensibilité de détection modifiée.
