A food composition comprising gas bubbles is provided. It contains based on the food composition at least 10 wt.% of water, optionally fat, wherein the amount of fat and water taken together is at least 60 wt.% and less than 99 wt.%, at least 1 vol.% and less than 70 vol.% of gas, fibre particles and surface active particles. The volume weighted mean diameter of the surface active particles (d2) is smaller than the length of the fibre particles (L). Also a process is provided to prepare the product. The process includes the steps of incorporating surface active particles and fibre particles in a liquid food composition, incorporating gas in said liquid composition and packing the food composition.
L'invention concerne une composition alimentaire comprenant des bulles de gaz. Elle contient, par rapport à la composition alimentaire, au moins 10 % en poids d'eau, éventuellement des matières grasses, la quantité de matières grasses et d'eau combinées étant supérieure ou égale à 60 % en poids et inférieure à 99 % en poids, une quantité supérieure ou égale à 1 % vol. et inférieure à 70 % vol. de gaz, des particules fibreuses et des particules à surface active. Le diamètre moyen pondéré en fonction du volume des particules à surface active (d2) est inférieur à la longueur des particules fibreuses (L). L'invention concerne également un procédé de préparation du produit. Le procédé comprend les étapes consistant à incorporer les particules à surface active et les particules fibreuses dans une composition alimentaire liquide, à incorporer le gaz dans ladite composition liquide et à emballer la composition liquide.
