An apparatus for decurling a sliced food material, for use with an automated slicer wherein the food material is carried in a reciprocating arcuate or linear movement. The sliced material is passed through a constricted space between separate stationary and moving surfaces. The moving surface moves relative to the stationary surface at a speed that is at least as fast as the speed at which the food is carried towards the knife. The moving surface is incorporated within a guide plate which has a profile that approximates the arcuate or linear path of the food in its travel into and out of contact with the knife. The moving surface may consist of an array of rotatably driven elastic bands or belts that travel within a series of grooves within the guide plate, and which are driven by a driving roller. The belts serve to transfer the sliced food to another work station and prevent the food supply from being pinched against the guide plate.
