It is intended to provide a food containing a large amount of functional components, which is obtained by using a processed barely product (for example, barley seeds having been soaked in cold or warm water, sprouting barley or barley malt) as a food material so as to increase the contents of GABA and other desired free amino acids in the food in the course of the production process thereof without using functional components such as amino acids as additives, and a method of producing such a food. It is also intended to provide a food containing functional components in such a large amount as being comparable to those obtained by using a processed barley product even in the case of adding unprocessed barley to materials commonly employed or using cereal materials commonly employed alone, by controlling the production process, and a method of producing such a food.
L'invention concerne un aliment renfermant une grande quantité de composants fonctionnels, que l'on peut obtenir au moyen d'un produit à peine traité (par exemple, des grains d'orge ayant été trempés dans de l'eau froide ou tiède, de l'orge en germination ou du malt d'orge) comme matière alimentaire afin d'augmenter la teneur de GABA et autres acides aminés libres recherchés dans l'aliment au cours de production, sans recourir à des composants fonctionnels tels que des acides aminés comme additifs, ainsi qu'un procédé de production d'un tel aliment. L'invention concerne également la fourniture d'un aliment contenant des composants fonctionnels en quantité importante comparable à celle obtenue par utilisation d'un produit d'orge traité même dans le cas de l'adjonction d'orge non traité à des matières couramment utilisées, ou utilisation de céréales généralement employées seules, par régulation du procédé de production.
