A food portioning system to efficiently output portion food material, the system including a hopper, a mold plate, air knockout assembly, and air and hydraulic cylinders. Flowable food material is put into the hopper where it is pushed into the mold cavity of the mold plate. By the action of the air and hydraulic cylinders, the mold plate is driven to a knockout position where the air knockout assembly releases compressed air onto the mold cavity to knock out the portioned food from the mold cavity.

Cette invention concerne un système de confection de portions alimentaires permettant de produire efficacement une portion d'aliment, lequel système comprend une trémie, une plaque de moulage, un ensemble pneumatique d'éjection ainsi que des vérins pneumatiques et hydrauliques. La matière alimentaire fluide est déversée dans la trémie et poussée dans la cavité de la plaque de moulage. Sous l'action des vérins pneumatiques et hydrauliques, la plaque de moulage est amenée sur une position d'éjection ou l'ensemble éjecteur envoie de l'air sous pression dans la cavité de moulage pour en démouler la portion alimentaire.
