- 10- FOOD PROCESSING METHOD AND APPARATUS AND FOOD PRODUCT PRODUCED THEREBY ABSTRACT OF THE DISCLOSURE A novel food product, especially a processed potato has a substantially solid core and a helicoidal ribbon wound along the core. Where the product is a potato, it is preferably deep fried for serving. The product is prepared using an apparatus in which the raw material is advanced along a path and engaged with a rotating blade that cuts the material to a position spaced from the core. The cutter is constructed with an unobstructed core zone, thus leaving the solid core in the product.
