A food product useful for preparing juices or wines and consisting of berries, particularly grapes, wherein at least some non-volatile compounds, particularly polyphenol compounds and/or flavour precursors, are present in the form of extracts in balanced amounts about 50 % higher than in identical berries processed according to conventional methods.
L'invention concerne un produit alimentaire pour l'obtention de jus ou de vins, constitué de baies, en particulier de raisin, dont au moins certains composés non volatils, notamment les composés polyphénoliques et/ou les précurseurs d'arômes, sont présents sous forme extraite en quantités équilibrées et supérieures à environ 50 % par rapport à des baies identiques traitées par des procédés classiques.
