The present invention includes a food oil composition comprising a blend of a first oil comprising an LC PUFA and a second oil comprising substantially no LC PUFA. The first oil can preferably comprise an omega-3 LC PUFA, an omega-6 LC PUFA or mixtures thereof. The present invention also provides methods of food preparation, more particularly, methods for skillet-frying, deep-frying, methods for preparing edible lipid-containing food sauces, methods for preparing extruded food products, and methods for enhancing the LC PUFA content of a food product, particularly previously cooked food products, and food products prepared in accordance with such methods. Such compositions and methods are useful, for example, for increasing intake of LC PUFAs.
La présente invention concerne une composition d'huile alimentaire comprenant un mélange d'une première huile comprenant un LC PUFA et d'une seconde huile ne comprenant sensiblement pas de LC PUFA. La première huile peut de préférence comprendre un oméga-3 LC PUFA, un oméga-6 LC PUFA ou des mélanges de ceux-ci. La présente invention concerne également des procédés de préparation alimentaire, plus particulièrement des procédés permettant de frire à la sauteuse, de cuire à la friteuse, des procédés permettant de préparer des sauces alimentaires comestibles contenant des lipides, des procédés permettant de préparer des produits alimentaires extrudés et des procédés permettant d'augmenter la teneur en LC PUFA d'un produit alimentaire, en particulier des produits alimentaires préalablement cuits et des produits alimentaires préparés selon de telles méthodes. De telles compositions et de tels procédés sont utiles, par exemple pour augmenter la consommation de LC PUFA.
