The invention concerns bacteria having byle salt hydrolysis activity and optionally and preferably also bile salt polymerisation activity. Food products comprising such bacteria have been found to be capable to reduce the blood cholesterol level in the human blood. The effect is obtained by interference with the cholesterol and/or bile salt metabolism and is based on BSH activity of the bacteria. Food products which, on the basis of their normal daily intake provide a daily-BSH-intake of 0.3 micro-mol/min/kg bodyweight, are preferred, and even more preferred are food products providing at least a daily-BSH-intake of 0.6 micro-mol/min/kg bodyweight. In a further preferred embodiment a BSH activity of at least 0.8 micro-mol/min/1e10 cfu is obtained by the common, daily intake of food products comprising the bacteria. Further preferred are food products comprising fat, wherein at least 40% of the fat are poly unsaturated fatty acids.

L'invention concerne des bactéries possédant une activité d'hydrolyse du sel biliaire avec, facultativement et de préférence, également une activité de polymérisation du sel biliaire. On a observé que les produits alimentaires renfermant ce type de bactéries étaient capables de réduire le taux de cholestérol dans le sang humain. L'effet est obtenu par interférence avec le métabolisme du cholestérol et (ou) du sel biliaire, et est basé sur l'activité HSB des bactéries. On privilégie les produits alimentaires dont l'absorption quotidienne normale permet une HSB journalière de 0,3 micromole/min/kg de poids corporel, et on préfère encore plus les produits alimentaires procurant une absorption quotidienne de HSB d'au moins 0,6 micromole/min/kg de poids corporel. Dans une variante préférentielle, une activité de HSB d'au moins 0,8 micromole/min/le10 cfu est obtenue par l'absorption quotidienne de produits alimentaires renfermant les bactéries. Une autre variante préférentielle consiste à utiliser des produits alimentaires renfermant des matières grasses dont 40 % au moins sont des acides gras polyinsaturés.
