16 ABSTRACT Food Storage To an increasing extent, vegetative foodstuffs such as vegetables and salads are not prepared freshly at the point of use but are prepared remotely and distributed to catering establishments or via the retail trade. It is desirable to disinfect such pre-prepared foodstuffs, but the use of an aqueous solution of an organic peracid can reduce the shelf life of the foodstuff by causing or exacerbating discolouration and/or decrisping. The problem is ameliorated by subsequently contacting the disinfected foodstuff with a neutralising solution of thiosulphate. The process is particularly suitable for potatoes, beansprouts and leaf vegetables such as cabbages and lettuces. 143xp-cs
