A process for the production of a formulated emulsion product which has a meat- like appearance. A protein source is emulsified and then alkaline is added to the emulsion to raise the pH to above about 8. The emulsion is rapidly treated in an emulsion mill to cause the protein in the heated emulsion to at least partially coagulate. The heated emulsion is then allowed to coagulate and form striations and is cut into chuncks. The formulated emulsion product so produced contains about 45 % to 85 % by weight moisture and has a chewy texture and a high striated appearance.

On décrit un procédé de production d'un produit, à base d'une émulsion formulée, qui présente une apparence de viande. On émulsifie une source de protéines et on ajoute ensuite un agent alcalin afin d'élever le pH de l'émulsion au-dessus d'environ 8. On traite rapidement cette émulsion dans un broyeur idoine, afin de provoquer, dans l'émulsion chauffée, une coagulation au moins partielle des protéines. On laisse ensuite l'émulsion chauffée se coaguler et former des striations, après quoi on la découpe en morceaux. Le produit à base de l'émulsion composée contient environ 45 à 85 % en poids d'eau et il présente une texture de type pâte à mâcher, ainsi qu'une apparence striée.
