A formulation that can be used to stabilise silage from cereal and other crops, and to enhance its nutritive value and diges- tibility is a ruminant, is of: enzymes comprising .beta.-1,4-xylanase and .beta.-1,3-xylosidase, but substantially free of .beta.-1,4-glucanase and .beta.-1.4-cellobiohydrolase; and one or more microorganisms selected for their ability to convert pentosans to lactic acid, with- out degrading protein, at pH 4-6.5.
