Process for separating solid fatty material from a triglyceride oil, which comprises the steps: a) heating the oil or a solution of the oil in an inert solvent until no longer a substantial amount of solid material is present; b) adding a crystallisation modifying substance to the oil or to the solution of the oil; c) cooling the oil resulting in crystallising a solid stearin phase besides a liquid olein phase and d) recovering the stearin phase by separating it from the olein phase, characterized in that the crystallisation modifying substance is a polysaccharide being an inulin or phlein with a molecular weight of 500-3990 Da, preferably 1300-2500 Da, of which at least 50 % of the hydroxyl groups on the saccharide subunits are connected to (C8-C24) unbranched alkyl chains and the remaining hydroxyl groups, optionally, are connected with a (C1-C7)-alkyl chain, preferably in the form of an acetic ester.
Procédé de séparation de la partie grasse solide d'une huile triglycéridique, comprenant les étapes suivantes: (a) chauffage de l'huile ou d'une solution de celle-ci dans un solvant inerte jusqu'à ce qu'il reste très peu de matière solide; (b) adjonction à l'huile ou à la solution d'huile d'une substance modifiant la cristallisation; (c) refroidissement de l'huile en vue de la cristallisation d'une phase stéarinique solide en plus de la phase oléinique liquide; (d) récupération de la phase stéarinique par séparation d'avec la phase oléinique. Le procédé se caractérise par le fait que la substance qui modifie la cristallisation est un polyoside, à savoir une inuline ou une phléine ayant une masse moléculaire comprise entre 500 et 3 990 daltons, et de préférence entre 1 300 et 2 500 daltons, au moins 50 % des groupes hydroxyle des sous-unités saccharidiques étant liés aux chaînes alkyles (C8-C24) non ramifiées, les autres groupes hydroxyle pouvant être liés à une chaîne alkyle (C1-C7), de préférence sous forme d'un ester acétique.
