In order to provide a novel free-flowing gelatin composition, in particular for use as food precursor, which gelatin composition retains its flowability, in particular even at temperatures below 30°C, it is proposed that the free-flowing gelatin composition comprises an aqueous liquid, gelatin gel particles dispersed therein and/or dissolved gelatin hydrolysate and one or more sugar components, wherein the sum of the contents of gelatin, gelatin hydrolysate and sugar component(s) is selected such that the water activity (aw value) of the composition is less than or equal to 0.97.

L'invention vise à mettre en oeuvre une nouvelle composition de gélatine à écoulement libre, notamment destinée à être employée en tant que produit alimentaire semi-fini, conservant ses propriétés d'écoulement libre, même à des températures inférieures à 30 °C. A cet effet, la composition de gélatine à écoulement libre contient un liquide aqueux, des particules de gélatine dispersées dans la composition et/ou de l'hydrolysat de gélatine dissous dans la composition, et un ou plusieurs constituants de sucre, la somme des teneurs en gélatine, hydrolysat de gélatine et constituants de sucre étant choisie de telle manière que l'activité d'eau (indice aw) de la composition est inférieure ou égale à 0,97.
