The present invention relates to a coffee tablet which is obtainable by molding and freeze-drying a solution of coffee solids into a desired shape and which has improved dissolution properties and an appealing smooth and/or shiny surface appearance. The coffee tablet also has a closed surface pore structure and an internal pore structure wherein a majority of the pores in the pore structure are interconnected and have a size of between 5 and 50 micrometers. The coffee tablet can also include a coating of a coffee, a flavorant, a colorant or an aroma. The coffee tablet is packaged in an environment of an aroma to form a product that exhibits fresh and strong flavor and aroma characteristics when a beverage is prepared from the tablet even after long term storage of the tablet.
L'invention concerne une pastille de café pouvant être obtenue par moulage et lyophilisation d'une solution de solides de café sous une forme voulue, ladite pastille présentant des propriétés de dissolution améliorées et un bel aspect de surface, lisse et/ou brillant. Ladite pastille de café présente également une structure poreuse superficielle fermée et une structure poreuse interne, une majorité des pores de la structure poreuse étant interconnectés et présentant une taille comprise entre 5 et 50 microns. Ladite pastille de café peut également comprendre un revêtement constitué de café, d'un aromatisant, d'un colorant ou d'un arôme. Ladite pastille de café est emballée à proximité d'un arôme de façon à former un produit qui présente un goût et un arôme à la fois frais et puissant, lorsqu'une boisson est préparée à partir de ladite pastille, même après une longue période de stockage de ladite pastille.
