Applicant: Chef-Reddy Foods Corporation Title: French Fryable Frozen Potato strips And Method of Making the same ABSTRACT Raw potato strips suitable for French frying are heated principally by circulation of hot air to dry their surfaces, next the potato strips are partially gelatinized and partially of hot humid air over them, further dehydrated, and such gelatinized and dehydrated potato strips are then frozen and stored in frozen condition until they are needed for consumption at which time they are finally deep fat fried. Optionally, the strips may be par-fried after being dehydrated and prior to being frozen.
