The system for peeling a fresh commodity (11) includes barbs (155) for piercing the peel in a plurality of spaced-apart locations. A vacuum infuser (17) is used to infuse the pierced commodity with an aqueous solution to loosen the peel. A peeling device (20, 20') supports a fresh commodity in a first position. The commodity is impelled toward a structure having cutting elements (294, 294') for scoring the peel to a predetermined depth. Preferably the scores are made along generally circumferential lines having substantially common endpoints (111, 112). Peel grippers (314, 314') hold the peel between the scores and release the peeled commodity, such that the peel is retained on the gripping means. A thruster (27, 27') is positioned and adapted to force the commodity along a path to engage the cutting and peel-gripping elements.
L'invention concerne un système d'épluchage d'un produit frais (11) comprenant des pointes (155) permettant de piquer la peau à un bon nombre d'emplacements espacés; un infuseur sous vide (17) utilisé pour injecter une solution aqueuse dans le produit frais afin d'en relâcher la peau; un dispositif d'épluchage (20, 20') maintenant un produit frais dans une première position, produit frais qui est poussé vers une structure dotée d'éléments tranchants (294, 294') destinés à entailler la peau à une profondeur prédéterminée. Les entailles suivent de préférence des lignes périphériques présentant des extrémités sensiblement communes (111, 112). Le système comprend en outre des moyens de préhension de la peau (314, 314') servant à maintenir la peau entre les entailles et à relâcher l'article pelé, de manière que ce dernier repose sur des moyens de préhension et un micropropulseur (27, 27') placé et adapté pour pousser le produit le long d'un trajet afin qu'il entre en contact avec les éléments tranchants et d'épluchage de la peau.
