The fresh pasta has a dough comprising flour, eggs and/or water. The dough further comprises up to 50% of one or more fresh vegetables by weigh of the dough. The process for the preparation of a fresh pasta comprises the steps of mixing and kneading the flour with eggs and/or water realising a dough, sheeting the dough, forming the sheet of dough in order to obtain fresh pasta having the desired shape. The dough in realised by mixing and kneading, in addition to the other ingredients, also fresh vegetables.

Les pâtes fraîches sont préparées à partir d'une pâte comprenant de la farine, des ufs et/ou de l'eau. La pâte comprend en outre jusqu'à 50 % d'un ou de plusieurs légumes frais en poids de la pâte. Le procédé de préparation de pâtes fraîches comprend les étapes consistant à mélanger et à pétrir la farine avec des ufs et/ou de l'eau pour réaliser une pâte, à laminer la pâte, à former la feuille de pâte afin d'obtenir des pâtes fraîches ayant la forme souhaitée. La pâte est également réalisée par mélange et pétrissage, en plus des autres ingrédients, de légumes frais.
