ABSTRACT OF THE DISCLOSURE A food product made of carrots and particularly adapted for use as a snack food item, and a process for making the same, is disclosed. Carrots, preferably of large diameter, are cross-cut into slices of approximately 0.04 - 0.08" thick- ness and the slices are immersion fried for approximately 1 -2 minutes in a bath of a suitable edible oil of 300 - 400°F temperature. The resulting fried, carrot chips have a very palatable taste, crispy texture and substantially indefinite shelf-life.
