A process for preparing a frozen shrimp product includes the steps of preparing raw shrimps, cutting and separating the cephalothorax portion from the body portion of each of the raw shrimps, slitting the thin shell of the abdomen portion of each of the cut raw shrimps along a cutting line extending from the cephalothorax end toward the tail end of the thin shell, and packaging and cooling the slit shrimps.
