ABSTRACT OF THE DISCLOSURE Fructose is produced from inulin by subjecting a solution of inulin to enzymatic hydrolysis at pH 3.5-7, 60°-65°C with an inulinase preparation containing exo-inulinase and endo-inulinase in a ratio of 1:10 to 10:1, the inulinase preparation further exhibiting a high degree of thermal stability.
