This invention provides fruit and vegetable-derived compositions comprising a fruit or vegetable derivative of, in-ter alia, at least one Beta, Capsicum and Malus species, wherein the composition is at a pH in the range of about 3 to about 6.5. The invention further provides for process for the production of the same and uses thereof.
