A method of sweetening fruit, in one embodiment, includes soaking the fruit in a vertically circulated Brix solution to soak the fruit in a substantially homogenous Brix solution in another embodiment, the fruit is subjected to a two-stage soaking step which maintains the fruit at an elevated temperature in a high Brix solution to promote osmosis. Finally, in another embodiment, the fruit is soaked in an elongated table which is stirred by a stirrer that travels horizontally along at least a portion of a length of the table
