This invention concerns a biopolymer consisting of a polysaccharide composed of galactose (50-90%), glucose (1- 25%), mannose (1-25%) and rhamnose (0.5-20%), which may additionally contain, in trace amounts, xylose, fucose, ribose, arabinose and/or fructose. The galactose-rich polymer also contains non-saccharide components, namely, acyl groups. This invention also concerns a process for the production of the galactose-rich polymer, by microbial fermentation using glycerol or glycerol-rich substrates as carbon source, and recovery of the polymer from the culture broth. From the process for the production of the galactose-rich polymer results the co-production of intracellular biopolymers, namely, polyhydroxyalkanoates. This invention also concerns to the application of the galactose-rich polymer and the products of its partial or complete degradation and/or derivatization, namely, galacto- oligosaccharides, galactose, rhamnose and others, by physical, chemical and/or biological methods, in food, agricultural, textile and paper industries, pharmaceutical and cosmetic products, oil and metal recovery in mining industry, industrial waste treatment and wastewater treatment, among others.

L'invention concerne un biopolymère constitué d'un polysaccharide composé de galactose (50-90%), de glucose (1-25%), de mannose (1-25%) et de rhamnose (0,5-20%), pouvant également contenir, en quantités infimes, du xylose, du fucose, du ribose, de l'arabinose et/ou du fructose. Le polymère riche en galactose selon l'invention contient également des composants non saccharides, notamment des groupes acyle. L'invention concerne également un procédé de production associé consistant à réaliser une fermentation microbienne au moyen de glycérol ou de substrats riches en glycérol comme source de carbone, et à récupérer le polymère à partir d'un bouillon de culture. Ledit procédé de production entraîne également la coproduction de biopolymères intracellulaires, notamment des polyhydroxyalcanoates. L'invention concerne également les applications de ce polymère et des produits de sa dégradation et/ou dérivatisation partielle ou complète, notamment des galacto-oligosaccharides, du galactose, du rhamnose et autres, par des procédés physiques, chimiques et/ou biologiques, dans l'industrie alimentaire, agricole, textile et papetière, dans des produits pharmaceutiques et cosmétiques, dans la récupération de pétrole et de métaux dans l'industrie minière, dans le traitement des déchets industriels et des eaux usées, entre autres
