The present invention concerns a .beta.-galactosidase with transgalactosylating activity isolated from Bifidobacterium bifidum. The .beta.-galactosidase is capable of converting lactose to a mixture of oligosaccharides which are .beta.-linked and unexpectedly produces the .alpha.- linked disaccharide galactobiose. The mixture may be incorporated into numerous food products or animal feeds for improving gut health by promoting the growth of bifidobacteria in the gut, and repressing the growth of the pathogenic microflora.

L'invention concerne une .beta.-galactosidase possédant une activité de transgalactosylation et isolée de Bifidobactérium bifidum. Cette .beta.-galactosidase est capable de convertir lactose en un mélange d'oligosaccharides présentant une liaison .beta. et produit, de manière inattendue, la disaccharide galactobiose à liaison .alpha.. Ce mélange peut être incorporé dans de nombreux produits alimentaires ou aliments pour animaux afin d'améliorer le bien-être intestinal par promotion de la croissance des bifidobactéries dans l'intestion et inhibition de la microflore pathogène.
