The present invention provides a gel beverage composition for comprehensive nutritional supplementation, having balanced nutrients, refreshing taste, a low pH, a soft gel form suitable for drinking/eating and the ability to retain its gel form for a long period of time. The composition is a gel which has a pH ranging from 3-4 and contains 5-20% by weight of saccharide, 0.1-5% by weight of fat, 2.5-6% by weight of protein material which does not coagulate at pH 3-4, 0.2-3% by weight of citric acid, 0.2--1.5% by weight of at least one acid component selected from the group consisting of ascorbic acid, tartaric acid, succinic acid, malic acid, gluconic acid, phosphoric acid, phytic acid, lactic acid and trisodium citrate, 0.01-0.5% by weight of an emulsifying agent, 0.1-1% by weight of agar and 65-90% by weight of water.

L'invention concerne une composition de boisson apportant un support nutritionnel total, sous forme gélifiée, bien équilibrée en nutriments, au goûter rafraîchissant et à pH faible, pouvant être maintenue à l'état stable de gel souple approprié pendant une longue durée. Cette composition se présente sous forme d'un gel contenant, basé sur la composition totale, de 5 à 20 % en poids de carbohydrates, de 3,1 à 5 % en poids de lipides, de 2,5 à 6 % en poids d'un matériau protéique ne coagulant pas à un pH de 3 à 4, de 0,2 à 3 % en poids d'acide citrique, de 0,2 à 1,5 % en poids d'au moins un composant acide sélectionné dans le groupe comprenant acide ascorbique, acide tartrique, acide succinique, acide malique, acide gluconique, acide phosphorique, acide phytique, acide lactique et trisodium citrate, de 0,01 à 0,5 % en poids d'un émulsifiant, de 0,1 à 1 % en poids d'agar et de 65 à 90 % en poids d'eau, et possédant une valeur de pH comprise entre 3 et 4.
