The invention relates to gelatine-free soft caramels, containing isomaltulose and methods for production thereof. The gelatine-free soft caramels comprise a soft caramel base mass, containing at least one polysaccharide hydrocolloid as texturising agent, a crystalline sweetener phase, formed from isomaltulose and a non-crsytalline sweetener phase.

L'invention concerne des caramels mous, renfermant de l'isomaltulose et exempts de gélatine, et un procédé de fabrication de ces caramels. Les caramels mous exempts de gélatine comprennent une matière de base de caramel mou renfermant au moins un hydrocolloïde de polysaccharide comme agent conférant la texture, une phase d'agent sucré cristalline, formée d'isomaltulose et une phase d'agent sucré non cristalline.
