The present invention relates to a protein having an activity of conferring on yeast brewer's yeast-type flocculating property; a DNA coding for the protein; a plasmid containing the DNA; a method for producing a yeast strain wherein brewer's yeast-type flocculating property has been conferred or enhanced with the use of the DNA and a method for producing a yeast strain wherein brewer's yeast-type flocculating property has been eliminated or reduced with the use of the DNA; and a method for eliminating or reducing brewer's yeast-type flocculating property of yeast by inhibiting the expression of the DNA. The present invention also relates to a yeast strain wherein brewer's yeast-type flocculating property has been conferred, enhanced, eliminated or reduced by the above method. Further, the present invention relates to a method for producing a brewed product comprising culturing the above yeast strain as well as a brewed product obtained by the method. According to.the present invention, there are provided the Lg-Flo1 protein having an activity of conferring on yeast brewer's yeast-type flocculating property and the DNA strand of Lg- FL01 coding for the protein. By introducing the above DNA of the invention into yeast cells as a foreign gene by genetic engineering techniques, i.e., introducing the DNA into yeast cells as an extranuclear gene and(/or) a nuclear gene, it is possible to confer on yeast brewer's yeast-type flocculating property or enhance this property in yeast. On the contrary, by introducing a DNA is obtained by destroying the DNA of the invention into yeast cells, or by inhibiting the expression of the DNA of the invention, it is possible to convert a flocculent yeast strain into a non-flocculent strain, or to reduce flocculating property.

L'invention concerne une protéine présentant l'activité de conférer une capacité de floculation de type levure de bière à des levures; un ADN codant cette protéine; un plasmide contenant cet ADN; un procédé de production d'une levure à laquelle on a conféré ou dont on a amélioré la capacité de floculation de type levure de bière à l'aide de l'ADN précité; un procédé de production d'une levure dont on a éliminé ou réduit la capacité de floculation de type levure de bière; ainsi qu'un procédé d'élimination ou de réduction de la capacité de floculation de type levure de bière d'une levure par suppression d'une expression de l'ADN précité; des levures auxquelles on a conféré une capacité de floculation de type levure de bière, laquelle a été améliorée, éliminée ou réduite par le procédé précité; un procédé de production de produits brassés, lequel consiste à incuber les levures précitées; ainsi que les produits brassés ainsi obtenus. L'invention concerne une protéine Lg-Flo1 et un ADN du gène Lg-FLO1 codant cette protéine. L'introduction de cet ADN en tant que gène étranger dans une levure par une technique de génie génétique, c'est-à-dire, l'introduction de cet ADN sous la forme de gènes extra-nucléaires et (ou) nucléaires dans des cellules de levure permet de conférer la capacité de floculation de type levure de bière à la levure ou d'en améliorer la capacité de floculation de type levure de bière. A l'inverse, une levure apte à la floculation peut être convertie en une levure non apte à la floculation ou sa capacité de floculation peut être réduite par introduction de cet ADN à l'état rompu, ou la suppression de l'expression de l'ADN.
