The present invention relates to genetically modified monocotyledonous plant cells and plants whose starch has an apparent amylose content of less than 5% by weight and an increased activity of a protein with the activity of a starch synthase Il and an increased activity of a protein with the activity of a glucan, water dikinase. Such plants synthesize starch with an increased hot-water swelling power. Methods and processes for the generation/preparation of these plant cells, plants, starches and flours are likewise subject matter of the present invention.
La présente invention concerne des cellules végétales et des plantes monocotylédones génétiquement modifiées dont l'amidon possède une teneur apparente en amylose inférieure à 5 % en poids et qui présentent une augmentation d'activité d'une protéine présentant une activité amidon synthétase II et d'une protéine présentant une activité dikinase GWD (glucan-water dikinase). De telles plantes synthétisent de l'amidon présentant un pouvoir gonflant accru dans l'eau chaude. L'invention se rapporte aussi à des méthodes et des procédés destinés à la génération/préparation de ces cellules végétales, plantes, amidons et farines.
