Starch of wheat and maize plants is altered by the introduction of a chimaeric gene comprising a glycogen synthase coding sequence under the control of a promoter directing expression and a terminator. A transit peptide for translocation of the glycogen synthase to the plant plastid may also be included in the chimaeric gene. The starch has altered processing characteristics, in particular an increased chain length.

On modifie l'amidon du blé et du maïs par introduction d'un gène chimère consistant en une séquence de codage de la synthase du glycogène sous le contrôle d'un promoteur commandant l'expression et d'un terminateur. L'invention porte également sur un peptide de translocation du gène de la synthase du glycogène chimère dans le plastide de la plante. L'amidon ainsi modifiée présente des caractéristiques de traitement modifiées dont en particulier une longueur de chaîne accrue.
