The invention pertains to glucans capable of being produced by glucosyltransferase activity of a lactic acid bacterium on a sucrose substrate, the glucan having an average molecular weight between 10 kDa and 1 GDa, consisting essentially of alpha (1,3)- and alpha (1,6)-linked anhydroglucose units (AGU) and to glucansucrases capable of producing these glucans from sucrose. The glucans have thickening and anti-corrosive properties. The glucans can be chemically modified.
L'invention concerne de nouveaux glucanes pouvant être produits par l'activité de la glucosyltransférase d'une bactérie d'acide lactique sur un substrat de saccharose. Les glucanes selon l'invention présentent un poids moléculaire moyen compris entre 10 kDa et 1 GDa et sont sensiblement constitués d'unités anhydroglucose (AGU) liées .alpha.(1,3) et .alpha.(1,6). L'invention concerne également des glucane-sucrases pouvant produire lesdits glucanes à partir de saccharose. Les glucanes selon l'invention présentent des propriétés d'épaisissement et des propriétés anti-corrosives et peuvent être modifiés chimiquement.
