A capsule comprising a capsule membrane and, enclosed therein, a capsule infilling liquid, wherein curdlan is used as a capsule membrane matrix of the capsule membrane. This capsule contains a non-protein capsule membrane matrix and accordingly excels in thermostability. There is further provided a process for producing the capsule.
