ABSTRACT An apparatus for rapidly heat treating a cereal such as rice comprises one or more cyclones wherein the cereal is contacted for 10 to 15 seconds with hot gas at a temperature of 400° to 600°C. Substantially all the heat treatment occurs in the cyclones which provide conditions of extreme turbulence enabling the production of a highly uniform heat-treated product. Quick cooking rice cookable in about six minutes may be produced very economically.
