HERMETICALLY PACKED FOODS ABSTRACT OF THE DISCLOSURE Hermetically packed foods which are sterilized within the container. It has been found that when the foods which have a pH higher than 5.5 have the pH reduced to be between 4.0 and 5.5, there is a marked reduction in the time required for sterilization of the food at a preselected temperature. It also has been found that when the food is treated with a pH reducing agent, the food has a tendency to have a slightly sour taste, and in such instances there is added to the food an antisouring agent. * * * * * *
