Compositions comprising cocoa, sweetener, a combination of food-grade enzymes, and optionally chocolate liquor are described. The compositions provide a cocoa/chocolate liquor flavored syrup having a high concentration of the flavoring, in part due to the substantially higher usage of cocoa and liquor than previous syrups. Additionally, the compositions have excellent flow properties for use in beverages and confections, while further having a low water activity which leads to a longer and more commercially useful shelf life. Some compositions will also contain an acidulant, a mold inhibitor, and vanilla flavor.
Description de compositions comprenant du cacao, un édulcorant, une combinaison d'enzymes alimentaires et, au choix, de la liqueur de chocolat. Les compositions donnent un sirop à saveur de liqueur de cacao/chocolat fortement aromatisé, en partie à cause de la proportion nettement plus élevée de cacao et de liqueur que dans les sirops précédents. Elles se démarquent en outre par l'excellence de leurs propriétés rhéologiques pour l'utilisation dans les boissons et les confiseries, tout en ayant une faible activité de l'eau, ce qui favorise une durée de conservation à l'étalage plus longue et plus avantageuse sur le plan commercial. Certaines compositions contiendront également un acidifiant, un inhibiteur de moisissures et de l'arôme de vanille.
