ABSTRACT A process and an apparatus for batch mixing and bakery dough. A batch of mixed dough is kneaded in an independent developing chamber for rotating the dough on an agitator that rotates about a horizontal axis. The rotating agitator tends to force the dough to the periphery of the chamber. The agitator then urges the dough against the periphery of the developing chamber where a selectively closable dough discharge is located. The dough that passes through the open discharge is engaged between a pair of oppositely rotating spaced rollers that are disposed on the exterior of the chamber, whereby the rotating rollers withdraw developed dough from the chamber. The rotation of the agitator is continued as the rollers withdraw the dough from the chamber.
