The invention describes improved methods of preparing high concentration and high viscosity beta-glucan concentrates. More specifically, the invention describes methods wherein beta-glucan is concentrated from bran, whole grain and endosperm flours through various slurrying steps in a high concentration alcohol media utilizing various combinations of enzyme and alkali treatment steps.

L'invention porte sur des procédés perfectionnés de préparation de concentrés de bêta-glucane à concentration et à viscosité élevées. Plus spécifiquement, l'invention porte sur des procédés permettant de concentrer du bêta-glucane à partir de son, de grains entiers et de farines de cotylédon. Le procédé comporte différentes étapes de mise en bouillie dans des milieux hautement alcoolisés mettant en oeuvre diverses combinaisons d'opérations de traitement enzymatique et alcalin.
