A foamable instant coffee product having a density of at least about 0.4 g/cc and comprising, instant coffee, a densified non-foaming creamer, an acid and a carbonate or bicarbonate salt to generate carbon dioxide, a foaming creamer, a proteinaceous foam stabilizer, and other optional ingredients such as sweeteners, milk solids, flavorants, thickeners, etc. This product is preferably made by compacting the non-foaming creamer, acid, carbonate/bicarbonate salt and instant coffee and then combining this compacted, densified material with the remaining ingredients. Alternatively, this product can be made by compacting the non-foaming creamer, acid and carbonate/bicarbonate salt, extruding the instant coffee and sweetener (e.g., sugar) and then combining the compacted and extruded materials with the remaining ingredients.
L'invention concerne un produit de café instantané mousseux présentant une densité d'au moins environ 0.4 g/cc et comprenant du café instantané, un colorant densifié non moussant, un acide et un sel de carbonate ou de bicarbonate afin de générer du gaz carbonique, un colorant moussant, un stabilisant protéique de mousse et d'autres ingredients facultatifs tels que des édulcorants, des solides du lait, des aromatisants, des épaississants, etc. On obtient ce produit de préférence par compactage du colorant non moussant, de l'acide, du sel de carbonate/bicarbonate et du café instantané puis en combinant cette matière compactée densifiée avec les ingrédients restants. Dans un autre mode de réalisation, on peut obtenir ce produit par compactage du colorant non moussant, de l'acide et du sel de carbonate/bicarbonate, par extrusion du café instantané et de l'édulcorant (par exemple du sucre), et ensuite par association des matières compactées et extrudées avec les ingrédients restants.
