Hydration control in cementitious compositions is achieved by adding a retarding quantity of a water-soluble neutralized salt of a .alpha.-monohydroxy di- or multifunctional carboxylic acid to the initial mix and an activating quantity of a water- soluble neutralized salt of a a-monohydroxy di- or multifunctional carboxylic acid when activation is required. Salts of citric, malic and citramalic acids are particularly favoured. Such control is especially useful in the application of shotcrete.
