The present invention is directed to the use of a hydrocolloid composition, particularly a starch composition, which is useful as a viscosifier and/or a stabilizer in food products, particularly cultured dairy products, to products containing such hydrocolloid composition, and to the method of preparing such products. The present invention is also directed to the replacement of at least a portion of the gelatin, gum, and/or non-fat milk solids present in food products with such composition without losing the organoleptic and structural properties of the product.
La présente invention concerne une composition hydrocolloïdale, plus particulièrement une composition d'amidon, pouvant être utilisée comme agent améliorant la viscosité et/ou comme agent stabilisant dans des produits alimentaires, notamment des produits laitiers fermentés. Cette invention concerne également des produits contenant la composition hydrocolloïdale susmentionnée, ainsi que le procédé de préparation de ces produits. La présente invention concerne enfin le remplacement, par ladite composition, d'au moins une partie de la gélatine, de la gomme, et/ou des extraits secs dégraissés du lait présents dans des produits alimentaires, sans que ceux-ci perdent leurs propriétés organoleptiques et structurelles.
