PRECIS DE LA DIVULGATION: La présente invention concerne un nouveau procédé d'hydrolyse d'au moins une fonction éther d'éthers aryl-aliphatiques. Ce procédé consiste essentiellement dans l'hydrolyse d'éthers aryl-aliphatiques en présence d'eau et se caractérise en ce que l'on opère en présence d'un sel d'acide carboxylique. Ce procédé a de très nombreuses applications possibles puisqu'il permet de transformer une fonction éther d'un composé aromatique en fonction phénolique. Il peut par exemple être appliqué à l'obtention de gaïacol à partir de vératrole.
