The invention relates to the use as surfactant, for the preparation of dispersions of multiphase systems that comprise a continuous aqueous phase containing a high concentration of electrolytes, of hydrophobically modified saccharides of general formula (I) and (II) [A]n(-M)s (I) [B]m(-M)s' (II) wherein[A]n represents a fructan-type saccharide [B]m represents a starch-type saccharide (-M) represents a hydrophobic moiety that substitutes a hydrogen atom of a hydroxyl group of the fructosyl and/or glucosyl units of the fructan- type and starch-type saccharides, which is selected from the group consisting of an alkylcarbamoyl radical of formula R-NH-CO- and an alkylcarbonyl radical of formula R-CO-, wherein R represents a linear or branched, saturated or unsaturated alkyl group with from 4 to 32 carbon atoms, and s and s', which can have the same value or not, represent the number of said hydrophobic moieties that substitute the fructosyl or glucosyl unit, expressed as average degree of substitution (av. DS) which ranges from 0.01 to 0.5. The invention also relates to a method for the preparation and/or stabilisation of dispersions of multiphase systems that comprise a continuous aqueous phase containing a high concentration of electrolytes, by using as surfactant one or more hydrophobically modified saccharides of general formula (I) and/or (II) defined above. Also dispersions of multiphase systems are disclosed that comprise a continuous aqueous phase containing a high concentration of electrolytes and that comprise as surfactant one or more hydrophobically modified saccharides of general formula (I) and/or (II) defined above.

L'invention concerne l'utilisation d'un tensioactif pour la préparation de systèmes multiphases qui comprennent une phase continue aqueuse contenant une concentration élevée d'électrolytes, de saccharides rendus hydrophobes par modification de formule générale (I) : [A]¿n?(-M)¿s?, et (II) : [B]¿m?(-M)¿s'?, dans lesquelles [A]¿n ?représente un saccharide de type fructosane, [B]¿m? représente un saccharide de type fécule, (-M) représente une fraction hydrophobe qui remplace un atome d'hydrogène du groupe hydroxyle des unités fructosyle et/ou glucosyle des saccharides de type fructosane et du type fécule, qui est sélectionnée dans le groupe constitué d'un radical alkylcarbamoyle de formule R-NH-CO- et d'un radical alkylcarbonyle de formule R-CO-, R représentant un groupe alkyle linéaire ou ramifié, saturé ou non saturé contenant de 4 à 32 atomes, et s et s', qui peuvent présenter la même valeur ou non, représentent le nombre desdites fractions hydrophobes qui remplacent l'unité fructosyle ou glucosyle exprimé en degré moyen de substitution variant entre 0,01 et 0,5. L'invention concerne également un procédé de préparation et/ou de stabilisation des dispersions de systèmes multiphases qui comprennent une phase aqueuse continue contenant une concentration élevée d'électrolytes, impliquant l'utilisation comme tensioactif d'un ou plusieurs saccharide(s) rendu(s) hydrophobe(s) par modification correspondant aux formules générales (I) et (II) définies ci-dessus. L'invention concerne en outre des dispersions de systèmes multiphases qui comprennent un phase aqueuse continue contenant une concentration élevée d'électrolytes et comme tensioactif un ou plusieurs saccharide(s) rendu(s) hydrophobe(s) par modification correspondant aux formules générales (I) et (II) définies ci-dessus.
