The invention concerns an ice confectionery product based on water ice having a soft core texture and comprising: i) a water ice core containing 32.5 to 40 wt. % of milk solids, overrun in a proportion of 30 to 50 % and whereof the texture is similar to that of an extruded ice cream and ii) a wafer protected against humidity at least on one of its contact surface with the water ice core, with a barrier layer and wherein the wafer is formed to constitute a mould containing said core.
L'article de confiserie glacée moulé à base de glace à l'eau de texture tendre à coeur, comprend; i) Un coeur de glace à l'eau contenant 32,5 à 40 % en poids de matières sèches, foisonné à un taux de 30 à 50 % et dont la texture est semblable à celle d'une crème glacée extrudée et ii) Une gaufrette protégée de la prise d'humidité au moins sur sa face au contact du coeur de glace à l'eau, par une couche barrière et dans lequel la gaufrette est formée pour constituer un moule contenant le dit coeur.
